Top chef Rodrigo Oliveira cooks on board on a KLM flight


Oliveira confirmed his abilities on flight KL792 from São Paulo to Amsterdam. Oliveira places collectively the menus that KLM serves in World Enterprise Class and Premium Consolation Class on flights departing from São Paulo and Rio de Janeiro. In the course of the flight, Oliveira helped the crew put together the dishes on board.

“Making ready the meals on board was positively a novel and particular expertise. Seeing the reactions of the passengers to this stunning and new menu that we developed collectively, it was like taking a chunk of Mocotó into the air,” says Rodrigo Oliveira.

Rodrigo Oliveira created 4 menus that KLM serves all 12 months spherical. The present collection runs till July and the menu composed by the highest chef in World Enterprise Class is as follows:

  • Lima bean French dressing with pumpkin and coconut, shrimp marinated in annatto and leafy greens
  • Sertaneja salad: cherry tomatoes, pickled purple onion, coalho cheese and blended greens Cassava gnocchi, mushrooms, tucupi sauce and a sauce of tulha cheese Sea bass, plantain puree, spinach, beurre blanc of brazil nuts Beef shank in wine sauce, cassava puree with marrow squash, sautéed kale, candy and bitter pumpkin

Rodrigo Oliveira has been the top of Mocotó for 20 years, the award-winning conventional restaurant within the neighborhood of Vila Medeiros (São Paulo, Brazil). The restaurant is listed as Bib Gourmands by the Michelin Information.
